M,m! Mexciannnnnnnnnnn................


I don't know about you, but mexican food is one of my all-time favorite treats. Growing up at my parents home, fresh homemade salsa and guacamole were staples. My father, a long-distance truck driver, fell in love with mexican food while driving out west and brought back with him lots of yummy ideas we fell in love with.

Now that I am moving toward a whole food plant based diet, I wanted to find a way to still enjoy all the flavor without all the heavy oils and meat. That's when I came up with my veggie fajita recipe. Even though it doesn't have any meat, it still hits the spot with all the veggies and flavors. Top it with guacamole, add a side of spicy fat-free refried beans, southwestern corn, quinoa, and bell peppers and your taste buds will have a party! Ingredients

2 lg sweet onions sliced into large sections

1-2 bell peppers cut into thin slices

3 medium/large tomatoes quartered with seeds

Frontera Fajita Seasoning ( can be found at Target or Publix)

Fajita Shells ( the photo shows flour tortillas, but I recently found whole wheat tortilla shells from Trader Joes with no shortening or partially hydrogenated oil....they can also be found at most local health food stores)

Wholly Guacamole or homemade

1/2 cup water

Directions

In large skillet over medium heat, pour in water and add bell peppers. Top with lid and steam for approximately 4-5 minutes, checking every minute or so to ensure peppers do not burn. You may need more time depending on how firm you like the peppers to be. Next, add onions and return lid. Steam another 4 minutes, checking every couple of minutes to make sure nothing burns. When vegetables have *almost* reached your preferred tenderness, add tomatoes and approximately 3 tablespoons of fajita seasoning ( use less if you like, you can always add more). Return lid and steam until tomatoes are tender, around 3 minutes. Remove pan from heat and plate your food. I like to top my fajitas with guacamole or salsa or both! Quick, easy and no oil, meat, or dairy..... only veggies for your taste buds to enjoy and to fill your tummy!
