Delicious Homemade Vegetable Soup
Fall is finally here, yay! It's my favorite time of the year, and nothing goes better with cooler weather than a nice bowl of warm, yummy soup. I love this recipe because it comes from my Mother and all her food is delicious, but second of all, it is so healthy, I call it "medicine in a jar"! It's full of healthy foods and best of all, it's super easy to make! Here's the recipe straight from her kitchen, enjoy! - Janie
My Mother's Homemade Vegetable Soup - From Martha P. Gray
Ingredients:
1 Quart Diced Tomatoes
1 Quart Chicken Broth
2 C Chopped Potatoes
1 C Chopped Onions
2 C Chopped Carrots
1 C Chopped Celery
1 Can Sweet Peas Drained
1 Can Green Beans Drained
1 Can Whole Kernel Corn Drained
Garlic Powder
Salt & Pepper
1/2 tbsp. Olive Oil
Large Pot
Directions: Pour broth into pot and add potatoes, onions, carrots and celery. Cook until tender. Then add tomatoes and remaining vegetables. Add a little garlic powder, salt and pepper and Olive Oil. Simmer on low for 30 minutes. Adjust seasonings to achieve the flavor you enjoy.
Note: You can use canned potatoes and carrots instead of fresh, this will cut down on cooking time. Can also add cooked ground beef or shredded chicken to make into stew.
