Favorite Stir-Fry Vegetables & Rice

Don't let the title fool you: there is NO frying going on at our house, but this steamed version of stir-fry is so good, I believe you will love it! The picture is my veggie version, but we make it with chicken all the time and it's great, too! Enjoy!

Simple Stir Fry Vegetables & Rice

Large back of Frozen Stir-Fry Vegetables (Your favorite Brand)

Quick Cooking Brown Rice

1 Chicken Breast (Optional)

2 tablespoons Olive Oil

Garlic Powder

Soy Sauce

Directions:

In large non-stick pan, add oil and heat on medium heat. Wash chicken and cut into bite size pieces. Add chicken to pan and cook until done, approximately 5-7 minutes. When chicken is completely cooked, add as many frozen stir-fry vegetables as you like. Sprinkle with garlic powder, a little if you like a hint, or a lot if you like stronger flavor like we do. Top with lid and let veggies and chicken steam. Cook brown rice according to package and set aside. Once vegetables are tender, turn off heat and add soy sauce. The amount is up to you, some people like a little, others a lot, depends on your taste. Plate a serving of rice and spoon chicken and vegetables on top, and that's it! To help with portion control, I always eat on a salad plate and when I'm not sure, I look up the serving size and measure it out.

P.S. I like mushrooms, a lot! So I always add a can to the mixuture to jazz it up a bit!
